What I Eat Wednesday: Vegetable Salad

Happy Wednesday!  Today’s blog post is going to be short and sweet (which I’m a fan of because the weather is so nice today and I’m getting antsy to go on a run! 🙂 ) 

I’m going with simple and healthy today with Vegetable Salad:

Vegetable Salad

This technically isn’t a recipe, but I just wanted to talk about how great it is to just throw a nice salad together for dinner to get your veggies in for the day.  I’ve never been a huge fan of cooked vegetables, but I love fresh veggies and my general go to is salad. Last night I threw together a salad and then quickly cooked some eggs to serve with it for some protein.


Here’s the list of veggies I threw into this colorful masterpiece: 

  • Romaine Lettuce
  • Spinach
  • Chopped Celery
  • Chopped Green Pepper
  • Chopped Carrots
  • Black Olives
  • Canned Corn
  • Garbanzo Beans (or Chickpeas…whatever you want to call them 😉 )

Notes from For the Love of Running Kitchen: I usually like to top my salads with cottage cheese.  Cottage cheese has so much protein and I find it so delicious on salads! The best thing about making a salad is that you can do anything you want with vegetables and fruit and it will generally be very healthy! So, next time you can’t think of how to get your veggies in for the day, go for a colorful salad. 🙂
